Η διαδικασία της παραγωγής του ελαιολάδου έφερε στο προσκήνιο μία διαρκώς εξελισσόμενη τεχνολογία, όπου οι τραχιές πέτρες έδωσαν τη θέση τους στους ληνούς και έπειτα στους ελαιόμυλους. Έτσι η εκπίεση της ζύμης με τα χέρια πέρασε στη συμπίεση με το λοστό της Θηρασίας, στο πιεστήριο της κλασικής εποχής, τον ατέρμονα κοχλία του Ήρωνα για να ολοκληρωθεί με τους οργανωμένους πλέον «ληνεώνας».

The process of production of olive oil brought in the limelight a permanently evolving technology, where the coarse stones gave their place in olive pressesand then in olive mills.Thus the squeezeof dough with the hands gave place to the compaction with the jemmy of Therasia, tothe pressof the classic period, afterwards to the interminable snail of Heronand finally to the organised so called lineonas.

The process of transforming the olive-crop in olive oil took place in three successive phases. The first step was the crash/squeezeof the fruit, from which a single mass olive pulpwas produced. Τhen followed the compaction of the pulp, so as for the liquids of this mass to come out and finally took place the segregation of oil from the remainder liquids, that is to say water and other impurities.
